Sweet Potato Casserole

This dish is equally tasty as a side dish or as a dessert.


3 cups sweet potatoes (about 3 large)
1 cup sugar
1/2 cup butter, room temperature
2 eggs, beaten
1 tsp. vanilla
1/3 cup milk


Boil sweet potatoes until soft. Let cool, then peel and mash.

To the mashed sweet potatoes, add the rest of the ingredients, and stir to combine. Pour the mixture into a baking dish.

Topping
1 cup brown sugar
1 cup chopped pecans
1/2 cup flour
1/3 cup butter, melted

Combine topping in a separate bowl.

Top sweet potato mixture with pecan mixture.

Bake uncovered 30 minutes at 350.
