Corn Sauté

2 tablespoons butter
1 minced garlic clove
4 cups fresh (or frozen) corn kernels
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/3 cup finely chopped green onions
2 teaspoons lime rind (optional)



Melt butter in a large skillet over medium-high heat. Add garlic to pan; sauté 2 minutes. Add corn, salt, and pepper; sauté 3 to 5 minutes. Remove from heat. Stir in green onions and lime rind.
